ABOUT Achari Bhindi Raita RECIPE

Raita is a accompaniment which is typically served with Pulao or Biryani. The Bhindi raita brings a nice variation to the typical raita.

Ingredients Serving: 4

  1. Ladies finger/Okra (bhindi)- 200 gm
  2. Curds (dahi)- 1 cup
  3. Oil- 2 tbsp
  4. Readymade Mango pickle masala- 3 tsp (I used K-Pra pickle masala)
  5. Mustard seeds ( rai / sarson)- 1 tsp
  6. Dry red chillies- 2 nos
  7. Asafoetida (Hing)- ¼ tsp
  8. Curry leaves- 6 nos
  9. Fresh coriander, finely chopped- ¼ cup
  10. Sugar- ½ tsp or to taste
  11. Salt- to taste

Instructions

  1. Wash all the bhindi and dry with a clean towel. Rub little bit with a towel to clean its rough surface.
  2. Cut cut lengthwise. Trim the ends and cut into ½" pieces.
  3. Heat 1 tbsp oil in a pan. Add chopped bhindi in it.
  4. Stir fry for 2 minutes on high heat. Then turn heat to low.
  5. Add salt and saute for few minutes on low heat.
  6. Add Mango pickle masala and saute till bhindi cooked. Let them cooled.
  7. Combine curd, chopped coriander, sugar and salt in the bowl. Beat together.
  8. Heat 1 tbsp oil in the small/tadka pan. Add mustard seeds, when it starts crackling add curry leaves, red chilies, hing and switch off the gas.
  9. Add this tadka in the curd and mix well.
  10. Add the sauteed bindi in curd mixture before serving.
  11. Serve with biryani/pulao or roti.
