ABOUT Cauliflower Payasam/Gobi Kheer RECIPE

Though it sounds very unusual, gobi kheer has a delightful taste and feels a lot like rabdi. Its a great option during the 'fasting' season or for anyone who is following a paleo/no grain diet.

Ingredients Serving: 4

  1. Cauliflower- 1 [medium size]
  2. Milk - 3 cups [ about 750 ml]
  3. Condensed milk - 200 ml
  4. Cardamom pods - 4/ Cardamom Powder- 1 tbsp
  5. Saffron/ kesar strands- 1 tsp
  6. Ghee- 2 tbsps

Instructions

  1. Heat a large pot of water and bring to boil.
  2. Blanch the cauliflower for 5-8 minutes.
  3. Rinse with cold water and cut into medium sized florets.
  4. Blitz in an electric mixer to a 'powdery' consistency. [This is our cauliflower rice]
  5. Heat the ghee in a large thick bottom wok/pan.
  6. Add the 'cauliflower rice' and stir fry on low heat until the moisture evaporates .
  7. Add the milk, cardamom, saffron starnds and allow to simmer on low heat until it reduces to half . Stir often.
  8. Add the condensed milk and bring to a final boil before turning off heat.
  9. This tastes best when served chilled.
