Ingredients Serving: 3

  1. Black Eyed Beans - 1/2 Cup boiled
  2. Whole grain penne pasta -1/2 cup
  3. Mashed Potato - 1 medium
  4. Water - 3 cups
  5. Tomatoes - 2 (chopped)
  6. Onions - 1/2 Cup
  7. Pizza Sauce - 4 tbsp
  8. Garlic Cloves - 4 (Crushed)
  9. Red chili Powder - 1/2 tbsp
  10. Coriander - 1/2 tbsp
  11. Cumin powder - 1/2 tbsp
  12. Salt as per taste
  13. Italian seasoning - 1 tbsp
  14. Freshly grounded black pepper.

Instructions

  1. Soak blackeyed beans or Canned Beans and pressure cook with 1/2 cup of water, salt and potato.
  2. When the pressure comes down, add blackeyed beans with water to the sauce pan. Add boiled potato, chopped onions, crushed garlic, tomatoes, pizza sauce, salt, red chilli powder, cumin and coriander powder. Add 2 more cups of water.
  3. Bring it to a boil. This takes around 7 to 10 minutes.
  4. Check for seasoning and garnish with finely chopped coriander leaves and freshly grounded black pepper and 1 tbsp Italian seasoning.
