Kappa baingan

Ingredients to make Kappa baingan

  • 2 big size brinjals
  • 2 onions
  • 3 tomatoes
  • 3 teaspoon chopped capsicum
  • 3 teaspoon paneer cubes
  • 2 green chillies
  • 1 teaspoon ginger garlic paste
  • turmeric powder 1/2 teaspoon
  • coriander powder 2 teaspoon
  • Red pepper powder 1 teaspoon
  • Garam masala powder 1 teaspoon

How to make Kappa baingan

  1. Wash brinjals and cut them into halves.
  2. In a pan put 2 teaspoon oil.
  3. Put brinjal halves in it on slow flame.
  4. Roast from both sides.
  5. Now keep them on a plate.
  6. Scoop out the flesh of brinjals and put it in in a bow. Ensure that the skin remains intact.
  7. Now in a pan put 2-3 teaspoon oil.
  8. Add cumin seeds.
  9. Add finely chopped onions. Saute.
  10. Add ginger garlic paste.
  11. Add chopped tomatoes and green chillies.
  12. Roast well.
  13. Now add chopped capsicum and paneer.
  14. Now add all the dry spices.
  15. Add brinjal flesh.
  16. Mix it well.
  17. Fill this bhaji into the skin of the roasted brinjals.
  18. Garnish with paneer, capsicum and tomatoes.

My Tip:

Can add green peas into the bhaji.
