Mediterranean Grilled Veggies

Ingredients to make Mediterranean Grilled Veggies

  • 1 large sized eggplant sliced in round pieces
  • 4 zucchinis sliced in round pieces
  • 1 medium sized onion sliced in thick pieces
  • 2 yellow coloured capsicums sliced in thick pieces
  • 1 tbsp or as required- olive oil
  • Salt and pepper to taste
  • Few basil leaves and coriander strands to garnish

How to make Mediterranean Grilled Veggies

  1. Heat the grill to a medium heat.
  2. Take a large bowl, put in the eggplant, zucchini, eggplant, capsicums, onions with olive oil, salt and pepper as per taste. Toss these ingredients well together.
  3. Grill these vegetables while covering it. Cook the eggplant for 5-6 minutes and 1-2 minutes for the onions, capsicums and zucchinis while turning them occasionally.
  4. Serve hot with tortillas and a garnish of coriander and basil leaves.
