This is a recipe of stuffed brinjals, a spicy but easy to make dish which can be served with some roti.

Ingredients Serving: 6

  1. Brinjal 8-10 small
  2. Onion 4
  3. Red chilli powder 11/2tsp
  4. Turmeric powder 1tsp
  5. Coriander powder 2 tsp
  6. Salt to taste
  7. Ginger garlic paste 11/2tsp
  8. oil

Instructions

  1. Wash and cut the brinjal in such a way that it remains intact from one side.
  2. Grind onion and ginger garlic to make paste
  3. Fill in all the other spices and salt
  4. Fill this masala in brinjals.keep the left masala aside.
  5. In a pan heat oil add brinjals let it half cook
  6. Then add the rest masala in it cook it completely by covering the pan
