Ingredients Serving: 2

  1. brinjal one medium round one
  2. three tomatoes
  3. cheese half cup grated
  4. breadcrumbs half cup
  5. oil for frying two cups
  6. Salt to taste
  7. Black pepper half teaspoon
  8. butter two teaspoon
  9. olive oil one tablespoon
  10. Red chilli powder half teaspoon
  11. One medium onion
  12. five garlic pods

Instructions

  1. cut brinjals in roundels half inch thick
  2. coat brinjal roundels with salt n breadcrumbs
  3. deep fry the breadcrumbs coated brinjal roundels
  4. chop onions in fine pieces
  5. mince garlic
  6. chop tomatoes into very small pieces
  7. heat butter and olive oil together
  8. add garlic fry for half minute
  9. add onion fry till translucent
  10. add tomatoes after onions turn translucent
  11. now add salt
  12. red and black pepper
  13. and cook till tomatoes turn mushy
  14. pour the tomato purée in a microwaveable dish
  15. arrange fried brinjal on top of tomato purée
  16. then top with grated cheese
  17. microwave for five minutes
  18. serve
