Mangodi curry is a rajasthani curry ..but my mother always made mangodi with diffrent veggies for diffrent taste and best for those who dont want to eat mangodi

Ingredients Serving: 4

  1. 1 medium sized cauli flower
  2. 1/2 cup mangodi
  3. 1 /2 cup tomato puree
  4. 2 green chillies cut into small pieces
  5. 1 Cup water
  6. 1 tsp turmeric powder
  7. 1 tsp red chilly powder
  8. 1 tsp Kashmiri red chilly powder
  9. 1 tsp corriender powder
  10. 1 tsp cumin seeds
  11. 1 tsp Asafoetida
  12. Salt to taste
  13. Oil 4-5 tbsp
  14. corriender leaves

Instructions

  1. First of all crush the mangodi with a rolling pin and cut the cauliflower into florets
  2. In a deep pan add water to boil and boil the florets
  3. Mean time in an another pan keep 1/2 cup of water to boil
  4. In a wok heat oil add cumin seeds , green chillies and crushed mangodi
  5. Saute it in slow heat till mangodi turns light brown then add 1/2 cup boiled water which we boil earlier
  6. Now add tomato puree and all dry spices into it
  7. Cook till oil leaves the sides
  8. Now add boiled florets of cauliflower and mix well
  9. Add little more water if needed and cook for another few seconds
  10. Garnish with corriender leaves
  11. Serve with rice , chapati or naan
