Ingredients Serving: 20

  1. Dates Deseeded- 250 grams
  2. Fine Semolina (Chiroti Rava)- 250 grams
  3. Oil/Ghee- 2 tbsp
  4. Vanilla essence/cardamom powder- 1/2 tsp
  5. Grated Almonds (optional)- 1 tsp

Instructions

  1. Soak the deseeded dates in hot water for 10 minutes. (Note that the water should be very hot and not warm)
  2. Then blend these soaked dates to a fine puree using the same water it was soaked in.
  3. In a pan, heat oil and add the semolina. Fry this on a low flame till it turns slightly brown in colour.
  4. Then transfer the semolina to a plate so that it cools down for a while.
  5. Heat the same pan again, add in the dates puree and bring it to boil under a low flame. Add in the semolina and mix well. Let the mixture cook for 5-7 minutes under a low heat.
  6. Keep stirring the mixture continuously till it stops sticking to the bottom of pan and forms a big lump. Add in the vanilla essence or cardamom powder and give it another mix. Then remove it from the flame.
  7. Let the mixture cool for a while before you take it on a clean surface to knead it. Once the mixture is warm enough to touch, knead it for 2 minutes.
  8. Spread the mixture and cut it into your desired shapes. Sprinkle grated almond for a special look.
  9. Serve warm or chilled as per your desire.
