Vegetable Pasta in White Sauce

ABOUT Vegetable Pasta in White Sauce RECIPE

Using a very basic sauce of wheat flour and butter, this delicious pasta is created. A must try for everyone.

Ingredients Serving: 2

  1. 180 grams - penne or any other pasta of your choice
  2. 1 tablespoon - olive oil
  3. 1 tablespoon - butter
  4. 1/2 tablespoon - whole wheat flour
  5. 1/4 cup - chopped onion
  6. 1/4 cup - chopped tomatoes
  7. 1/4 cup - chopped red pepper
  8. 1/4 cup - chopped yellow pepper
  9. 1 cup - milk
  10. 1/2 tablespoon - dried basil (use fresh if available)
  11. 2 tablespoons - grated cheese
  12. salt pepper, black pepper and chilli flakes as per taste

Instructions

  1. Cook pasta as per instructions on your package.
  2. Fill a large, tall pot with water and place over high heat.
  3. When the water begins to boil, add salt to taste. After the salt has dissolved and the water is really boiling, add pasta to the water and stir frequently the first two minutes, then occasionally until the end of the cooking process.
  4. Use a non stick pan for making the sauce.
  5. Sauté onions in olive oil till golden brown. Stir in red and yellow peppers, tomato, basil, chilli flakes, salt & pepper. Cook for another 5-8 minutes, stirring occasionally. Set aside.
  6. In another pan, heat butter till it just melts. Add wheat flour and stir continuously roasting it. After 2-3 minutes when the flour is nicely roasted, remove from flame and slowly add milk.
  7. While adding milk, continue to stir rigorously using a whisk to avoid any lumps from being formed. When the milk is added and there are no remaining lumps in the sauce, return the pan to flame for cooking.
  8. Allow the sauce to thicken for few minutes, now add cheese and mix uniformly. Slowly add the drained pasta and spice onion mix made earlier.
  9. Cook for 4-5 minutes till uniformly heated. Serve hot with garlic toast.
