Schezwan Fried Cauliflower Rice is a delicious dish with good for you veggies and a lower carb version of rice. It's a quick and easy meal for those fast paced weekdays when you need to be in and out of the kitchen in no time at all.

Ingredients Serving: 6

  1. 4 cups - Cauliflower - riced
  2. 1/4 cup of each - Carrots, Green Beans, Baby Corn, Red and Yellow Bell Pepper - diced
  3. 1/4 cup - Frozen Baby Peas
  4. 1/2 cup - Baby Portabella Mushrooms - diced
  5. 1/2 cup - Cabbage - diced
  6. 1/4 cup - Garden Onions (scallions) - diced - save one tablespoon for garnish
  7. 2 cloves - Fresh Garlic - minched
  8. 2 Tbsp. - Coconut Oil
  9. 1 Tbsp. - Butter
  10. 2 Tbsp. - Schezwan Sauce
  11. 2 Tbsp. - Soy Sauce

Instructions

  1. Remove cauliflower florets from core and place in food processor. Pulse until it resembles rice. Place in micro safe bowl and cover with plastic wrap and cook on high for 8 minutes. Set aside until needed.
  2. While cauliflower is cooking dice all veggies.
  3. Heat large skillet with coconut oil, butter and garlic. Add veggies, garlic, salt, and pepper. Cook on Medium for 8 minutes or until done to your liking.
  4. Add cauliflower rice, sauces and vinegar. Cook on med/low until heated through. About 5 minutes. Remove from heat and serve.
