Ingredients Serving: 4

  1. Bitter gourd-250 gms
  2. Onions-4(big)
  3. Oil-2 tbsp
  4. salt
  5. Turmeric-1/4 tsp
  6. coriander cumin powder-1 tbsp
  7. Fennel seed powder-1 tsp
  8. Red chilli powder-1 tsp
  9. Aamchoor-1/2 tsp


  1. Wash and peel the bitter gourd.Cut them into round slices.Sprinkle salt and cover for half an hour.
  2. After half an hour,mix properly with hands such that all water is released from the bittergourd slices.Drain this water to remove bitterness from the karelas.
  3. Slice onions into long slices.
  4. Take a pan.Add oil.
  5. Add cumin seeds when oil heats up.Add a pinch of asafoetida.
  6. Put onions and roast for 2 minutes.
  7. Then add the bittergourd slices and salt.Cover and cook for 5 to 7 minutes.
  8. Again mix well and cook for 5 minutes or till bittergourd becomes soft.
  9. Now turn the gas to high and let the onions and bitter gourd brown for crunchy taste.Keep stirring.
  10. Add all spices.
  11. Mix and cover.Let it cook for 2 minutes and then serve with hot chapattis or with dal rice.
