These are so awesome cupcakes that even kids that don't like to have pumpkin would enjoy these.

Ingredients Serving: 4

  1. 3/4 cup all purpose flour
  2. 1/2 cup brown sugar
  3. 1/4 cup pumpkin puree
  4. 2 tbsp vegetable oil
  5. 1/4 cup milk
  6. 1/4 curd
  7. 1 tsp baking powder
  8. 1/4 tsp baking soda
  9. 1/4 tsp cardamom powder
  10. 1/4 tsp cinnamon powder
  11. 1/4 tsp coffee powder
  12. Frosting :
  13. 4 tbsp cream cheese
  14. 1 tbsp brown sugar
  15. 1/2 cup whipping cream
  16. 1 tsp cardamom powder


  1. Preheat oven to 180 C for 10 mins.
  2. In a large bowl combine milk , curd , brown sugar, pumpkin puree and oil . Whisk to combine.
  3. In another bowl sieve flour, baking powder, baking soda, salt, cinnamon powder, cardamom powder and coffee .
  4. Slowly add the dry ingredients to your wet ingredients, in batches, whisking gently until combined.
  5. Line a muffin tin with cupcake liners and fill 3/4 of each with an ice cream scoop.
  6. Bake 18-20 mins until a tooth pick comes out clean.
  7. Allow to cool completely.
  8. Frosting :
  9. Beat together cream cheese , cardamom powder and sugar until combined. Add the whipping cream and beat on high until stiff peaks.
  10. Transfer frosting to a pastry bag fitted with a large star tip.
  11. Assembly :
  12. Pipe out a nice swirl of frosting. sprinkle some brown sugar on each of them and enjoy.
