Make crispy eggplant fritters in few minutes ,njoy moonsoon

Ingredients Serving: 6

  1. eggplant /aubergine -2nos.
  2. Chickpea flour /besan - 1cup
  3. Salt to taste
  4. Red chilly powder-1/4 tsp
  5. Turmeric powder (optional)-1/4tsp
  6. Cumin powder -1/2tsp
  7. Carom seeds -1/2tsp
  8. Coriander powder -1/2 tsp
  9. Chat masala- 1-1/2tsp
  10. Fresh chopped coriander leaves
  11. Water -1/2 adjust according to texture of besan

Instructions

  1. In a bowl add besan.
  2. Add salt.
  3. Add red chilli powder.
  4. Add coriander powder .
  5. Add carom seeds.
  6. Add turmeric powder.
  7. Add cumin powder.
  8. Add finely chopped coriander leaves.
  9. Add little by little water and make a ribbon like consistency batter.(thick)
  10. Keep aside .
  11. Wash and Cut eggplant into thin roundels .
  12. Heat oil on medium flame.
  13. Dip eggplant pieces in the prepared batter .
  14. Shift it into hot oil.
  15. When one side is getting golden brown turn to other side .
  16. Deep fry till gets crispy brown coloured fritters .
  17. Take them out on the absorbent paper .
  18. Arrange them in a serving platter.
  19. Sprinkle chat masala .
  20. Crispy,yummy eggplant fritters are ready .
  21. Serve it with tomato ketchup.
  22. And a cuppa of piping hot tea .
  23. Enjoy ! Eggplant fritters ,enjoy monsoon.
