ABOUT Brinjal Sesame Sticks with Mint chilli dip RECIPE

I love to play with various ingredients and flavours in the kitchen so thought of making something innovative with brinjal. Crispy and delicious Brinjal Sesame Sticks are a perfect and delectable party snack or a starter. The sticks are crunchy outside and luscious inside. It tastes wonderful with a mint chilli dip. Must try recipe.

Ingredients Serving: 4

  1. 1 big brinjal
  2. 1 cup fresh bread crumbs
  3. 1/2 cup white sesame seeds slightly roasted
  4. 1 tsp ginger-garlic powder
  5. 1 teaspoon plus 1/2 teaspoon white salt
  6. 1 teaspoon chilli flakes
  7. 1/2 cup mixture of cornflour and rice flour
  8. 2 teaspoons olive oil
  9. 1 tsp oregano

Instructions

  1. Wash and peel the brinjal.
  2. Now cut it into half inch thick and 3-4 inches long sticks.
  3. Arrange the sticks on a plate and sprinkle 1 tsp of the salt and red chilli powder.
  4. Keep them aside for marinating for 10 minutes. (It magically helps to hold the shape and colour when you cook it after squeezing out extra juice from the sticks.)
  5. Take a medium shallow bowl, combine the bread crumbs, the sesame seeds, and 1/4 th teaspoon of salt (optional).
  6. Take another shallow bowl and make a slurry (runny paste) of rice flour and cornflour with 1/4 th cup of water.
  7. Mix in oregano, little salt, chilli flakes and ginger garlic powder.
  8. Mix well to make it lump free.
  9. Heat a non-stick pan with 1 tsp Olive oil.
  10. Now drain and thoroughly dry the brinjal sticks by patting them with paper towels or a clean kitchen towel.
  11. Now dip a brinjal stick first in the rice cornflour slurry, lift it up and shake off any excess liquid.
  12. Then put the stick in the sesame- breadcrumbs mixture and coat the brinjal stick completely.
  13. Lift it up and immediately transfer the stick to the pre-heated non stick pan.
  14. Repeat the making and coating steps with the remaining sticks.
  15. Cook the brinjal sticks, turning them, until golden browned, crispy, and tender to bite.
  16. Sprinkle chilli flakes, do the plating and serve hot with chilli mint dip or tabasco sauce.
