Ingredients Serving: 4

  1. 1 medium potato diced
  2. 1 medium brinjal cut into quarters
  3. 1 ridge gourd peeled and diced
  4. 1 small tomato chopped
  5. 1/2 carrot diced
  6. 100 gm pumpkin diced
  7. 1/2 inch ginger grated
  8. 2 green chillies slit
  9. Panch phoron 1/2 tsp
  10. 1 bay leaf
  11. Turmeric powder 1/2 tsp
  12. Coriander powder 1tsp
  13. Bhaja masala (dry roasted coriander seed and cumin seed grind together coarsely)
  14. Salt to taste
  15. Sugar 1/2 tsp
  16. Bori (lentil dumplings) fried and crushed 1/2 cup

Instructions

  1. Heat oil in pan. Add panch phoron and bay leaf.
  2. Add all the vegetables one by one along with salt. Sauté for 5 min.
  3. Add grated ginger, sugar, turmeric and coriander powder. Mix it well.
  4. Cover and cook for 5 to 6 min till the vegetables are soft.
  5. Add the bori and bhaja masala. Mix well.
  6. Cook for 2-3 more min.
  7. Serve hot.
