Ingredients Serving: 4

  1. 250 gms bitter gourd sliced
  2. 250 gms onion sliced
  3. 6-7 tbsp oil
  4. 1/4 tsp turmeric powder
  5. 1 tsp fennel seeds
  6. 1 tbsp red chilli pickle or kalaunji masala
  7. 1tsp dry mango powder
  8. Salt to taste

Instructions

  1. Sprinkle some salt on the sliced karela and leave it for 20 mins at least, then wash it nicely by rubbing it in between the palms...this will reduce the bitterness of the bitter gourd.
  2. Heat up the oil in a pan. Add the fennel seeds and let it splutter. Add the karela and onion together and mix it well...cover and cook it for 2-3 mins on a low heat soon the karela and onion will turn translucent...
  3. Add the turmeric powder and salt to taste...cook till onion and karela turns golden brown in colour...keep stirring at regular intervals...it should not get burnt...it should get equally cooked....mash it with the spatula roughly...so that onion and karela mixes with each other.
  4. Add the red chilli pickle or kalaunji masala...and the dry mango powder...serve this karela fry with dal rice...it will also taste delicious with chapatis...
