ABOUT Floretina RECIPE

Marinated cauliflower served with a saffron cheese sauce and plum gel.

Ingredients Serving: 2

  1. 10pc Cauliflower florets
  2. 1/2 tsp oregano mix
  3. Dash of honey
  4. Dash of apple cider vinegar
  5. Chilli flakes
  6. Salt to taste
  7. 8-10 big garlic pcs
  8. FOR SAFFRON SAUCE
  9. 1 tbsp Butter
  10. 1 tbsp maida
  11. 200 ML MILK
  12. 1 small pack of saffron
  13. 4 cubes processed cheese
  14. Salt to taste
  15. FOR PLUM GEL
  16. 1/4 cup plum syrup
  17. 1 tsp gelatin
  18. 5 tbsp hot water

Instructions

  1. In a bowl add the cauliflower and garlic, add the oregano, salt, chili flakes, vinegar, honey, olive oil and set to marinate for 30 mins
  2. For the sauce : In a pan add the butter and then the maida, stir till light brown. Now add the milk and saffron and bring to a boil. Simmer and one by one grate and add the cheese cube. Stir continuously. Once thick pass it through a a sieve and keep aside.
  3. In a bowl add the hot water and gelatin and mix till all lumps gone. Now In a non stick pan add the plum syrup , bring to boil and simmer. Add the gelatin mix and stir. Shut the gas off. Once at room temperature , strain through a muslin cloth .
  4. In a air fryer set the temperature to 180 degree , now add the marinated cauliflower and garlic, cook for 20 mins till you get a nice golden brown crust.
  5. Plate 5 pcs of cauliflower and garlic on a plate with saffron cheese sauce poured over it. Add a few drops of plum gel, garnish with coriander and serve.
