While the Bharwan karela is quite an opulent dish that calls for a lot of preparation, this frugal variant is equally delicious while being super easy to prepare !

Ingredients Serving: 4

  1. 2 medium sized bittergourds ( about 100 gm each )
  2. 2 medium sized potatoes
  3. 1/2 cup finely chopped green sorrel (khatta palak) leaves
  4. 2-3 garlic cloves
  5. 2 dry red chilis
  6. 1 finely chopped green chili (optional)
  7. 1 tsp powdered jaggery
  8. 2 tsp finely chopped onion
  9. 2 tsp oil
  10. salt to taste
  11. a pinch of turmeric

Instructions

  1. Wash the bitter gourds and put a slit along the length. Cut each potato into 2 halves.
  2. Put in a pressure cooker with some salt and turmeric. Add the potatoes to the same cooker. Cook on high flame for 1 whistle.
  3. Roast the dry red chilis on a low flame. (Be careful while doing this as the fumes may induce sneezing if inhaled). Crush them roughly once cooled.
  4. Open the cooker once steam escapes. Scoop out the seeds and inner portion of the bitter gourd.
  5. Peel and mash the potato.
  6. Add the chopped onions, crushed garlic, finely chopped green sorrel, chopped green chili, powdered jaggery, crushed roasted red chilis and salt to the mashed potatoes. Mix well.
  7. Stuff the mixture into the bitter gourds.
  8. Heat a non-stick frying pan. Add the oil.
  9. Place the stuffed bitter gourds on the pan. Cook on a low to medium flame till it gets browned throughout.
  10. Serve hot with white rice or even rotis.
