after dining out and having tried so many curries in the restaurants, tried out out this mushroom curry to get the restaurant taste at home.

Ingredients Serving: 6

  1. 200 gms diced mushroom
  2. 100 gms baby corn diced
  3. 2 medium tomatoes sliced
  4. 2 medium onions sliced
  5. 1 medium bowl diced peppers
  6. 1/2 tsp cumins seeds
  7. 10-12 garlic Cloves
  8. 10-12 cashews
  9. 2 green chillies
  10. 1/2 tsp coriander powder
  11. 1 tbsp red chilli powder
  12. 1/2 tsp turmeric powder
  13. 1/4 cumin powder
  14. 1/2 tsp garam masala
  15. 1 TBSP KASURI methi
  16. salt to taste
  17. fresh coriander leaves chopped
  18. 2 tbsp Fresh cream

Instructions

  1. start to heat up a pan, add the 6-7 tbsp oil, fry the peppers. this fried peppers will be added after the curry is ready. this will help the peppers remain crunchy.
  2. in the left over oil add the cumin seeds, let it splutter. add the garlic cloves, cashews and green chilies. cook till the garlic and cashews turn golden in color.
  3. add the sliced onions. cook till it starts to turn golden in color. goes in grated ginger. add the sliced tomatoes and cook till it turns tender. now let it cool and then grind it into a fine paste.
  4. now in the same pan add 3-4 tbsp oil. in the heated oil add the paste. add the diced baby corn. and cook it along with the paste. add the dry spices and cook till the oil starts to separate. keep the flame on a low heat.
  5. after cooking the paste for 5-6 minutes, add the salt to taste. then add the mushrooms, and cook for a minute or two.
  6. add water as per desired consistency. cover the lid ans let it simmer for 3-4 minutes. add the fried peppers, mix it well.
  7. add the fresh cream, kasuri methi and chopped fresh coriander leaves.
  8. scrumptious mushroom, babycorn and peppers curry is ready to serve.
