ABOUT Samose... RECIPE

Everybody loves samose, especially with the evening snacks but here we also have them for breakfast on sundays along with some jalebis. so follow this easy recipe to make these at home.

Ingredients Serving: 5

  1. For Dough:
  2. Maida- 2 cups
  3. Sooji [semolina] 1/2 cup
  4. Salt to taste
  5. Oil 1 teaspoon
  6. Warm water
  7. For Filling:
  8. Boiled and pealed potatoes 4-5
  9. Sauf [fennel seeds] 1/2 small spoon
  10. Rai [mustard seeds] 1/2 small spoon
  11. Jeera [cumin seeds] 1/2 small Spoon
  12. Dhaniya seeds [coriander seeds] 1 small Spoon crushed
  13. Ginger and green chilli paste 1 small spoon
  14. Kadi patta [curry leaves]
  15. hing [asafoetida] 1 pinch
  16. Salt to taste
  17. Red chilli powder - 1/2 tsp
  18. Haldi powder [turmeric powder] - 1/2 tsp
  19. Garam Masala powder - 1/4 th tsp
  20. Amchoor powder - 1/8 th tsp
  21. Oil 1 tablespoon
  22. Oil 3 cups or more for deep frying.
  23. Tomato sauce to serve

Instructions

  1. Take maida in a bowl, add sooji, salt and oil into it and and kneed the mixture to form a stiff dough with warm water.
  2. Keep the dough aside, I have posted a pic of dough here.
  3. Now for filling, take a kadhai in a medium flame, pour oil into it, and add rai, jeera, hing, dhaniya seeds, sauf, kadi patta and let them crackle.
  4. After it add ginger and chilli paste saute them for few sec, add salt, haldi powder, garam masala, amchoor paowder, red chilli powder and boiled potatoes into it.
  5. Saute them few minutes and bring them down in a plate to cool it.
  6. Now, take a small portion of dough and roll it thick in the form of poodi. remember the roll should be thick.
  7. Cut it into halves
  8. Not hold one half and fold it in the form of a cone. You can take water to stick it from the ends.
  9. Inside the cone fill the masala or filling and press the cone properly.
  10. Put a kadhai and add oil for deep frying into it in a medium flame
  11. When it's heated just place 2-3 samosas into it.
  12. You can adjust the flame low to medium and flip it every 2 mins.
  13. It will take 6 mins approx for the good light brown color.
  14. After 6 mins take out the crispy samosa in a plate and serve tomato sauce with it.
