ABOUT Masala Puri- Chaat using Peas RECIPE

Masala puri, or Masalapuri, is an Indian snack which is especially popular in the southern states of Karnataka, Tamil Nadu, Telangana and Andhra Pradesh. A form of chaat, the dish originated in the state of Karnataka. Typically spicy, the dish can also be made sweet based on the requirement(Wiki).

Ingredients Serving: 6

  1. Cinnamon stick 1 inch
  2. Clove 4
  3. Star anise 1
  4. Stone Flower 2 tsp
  5. Cumin seeds 1 tsp
  6. Fennel seeds 1/2 tsp
  7. Shah jeera 1/2 tsp
  8. Red chilly 1
  9. Pepper corns 1 tsp
  10. Pudina leaves 1 small bunch
  11. Coriander leaves 10-15 springs
  12. Ginger 1 inch
  13. Green chilly 1
  14. Chat masala 1/2 tsp
  15. Black salt 1/2 tsp
  16. Turmeric powder 1/2 tsp
  17. Salt
  18. Overnight soaked Peas 2 bowls
  19. Potato 1
  20. Tomato 4
  21. Onion 1 big
  22. Ready to fry pooris 30
  23. Lime juice 1/2 tsp
  24. Sev as required to top

Instructions

  1. Powder together : Cinnamon 1 inch Clove 4 Star anise 1 Stone flower 2 tsp Cumin seeds 1 tsp Fennel seeds 1/2 tsp Shah jeera 1/2 tsp Pepper corns 1 tsp Red chilly 1
  2. Grind together: Pudina 1 small bunch ,Coriander leaves 8 springs, Ginger 1 inch and Green chilly 1
  3. Deep fry the ready to fry pooris in hot oil and keep ready for later use.
  4. Pressure cook overnight soaked Peas 2 bowl, Potato 1 and Tomato 2 by adding little salt and water enough to cover.( 5-6 whistles in medium flame)
  5. Grind half cup of cooked Peas and 2 tomatoes. Mash the potatoes.
  6. In a pan, take cooked Peas , ground peas paste, ground pudina chutney, mashed potato and powdered masalas.
  7. Add sufficient water and bring it to boil. Cook in medium flame for while.
  8. Add chat masala, black salt, turmeric powder and normal salt as per taste. Squeeze little lime juice. Turn off the flame. Masala is ready. 
  9. Finely chop the remaining 2 Tomatoes, Onions and Coriander leaves and keep aside.
  10. Take a plate to assemble the problem prepared masala, pooris and tomato onions.
  11. Assembling: 1. Crush the pooris onto a plate (5-6 for a plate)
  12. 2. Pour the hot masala gravy
  13. 3. Top with chopped tomatoes , onions and coriander leaves
  14. 4. Serve with sev on top.
