Ingredients Serving: 5

  1. Maida (All purpose flour) 200 gms
  2. 1 small cauliflower chopped coarsely
  3. 2 medium sized boiled and mashed potatoes
  4. Green peas 20 gms
  5. 3-4 Green chillies finely chopped
  6. Pachphoron 1 tbsn ( combination of 1/2 tsp of seeds like nigella, cumin, black mustard, fenugreek and fennel)
  7. About 10 gms roasted cashews
  8. Oil to deep fry
  9. Salt to taste
  10. About 5 gms of ghee for the dough

Instructions

  1. Sift flour and salt together. Add ghee and water to knead a soft dough. Cover with moist cloth and keep aside.
  2. For filling:
  3. In a kadai or a heavy bottom cooking pan, take some oil and add panchphoran and allow to splutter.
  4. Add cauliflower and all other ingredients and mix well. Take off fire and keep aside.

  6. Last step is to deep fry till golden brown. If you use wheat flour alongside maida, you may need to fry for some more time and the crust may be a little hard.
  7. Enjoy with the chutney of your choice!
