Ghantho is an Odia dish. It is made is almost every house in Odisha on the next day of Dwitya occasion. Its full of vitamin and protein. A best way to feed all variety of vegetables n pulse to the entire family.

Ingredients Serving: 6

  1. Potato- 2big sized
  2. Pumpkin - 250gm
  3. Eggplant - 4 medium sized
  4. Snake gourd (turai) - 2 big sized
  5. Pointed gourd (parwal) - 8
  6. Elephant Apple - 250gm 1/2 medium sized
  7. Colosacia (arbi)- 100 gm
  8. Sugarcane - 6 inch
  9. Drum stick - 2
  10. White gourd (pani kakharu)- 250gm
  11. Yellow cucumber - 250 gm
  12. Raw Banana- 2
  13. Slipt green gram (hara moong)- 100 gm
  14. Brown chickpea (Chana) - 100gm
  15. White chickpea (kabuli chana) - 50gm
  16. Coconut - 1/2, grated
  17. Tomatoes - 4
  18. Green chilli - 8
  19. Ginger- 1inch
  20. Jeera - 1 tsp
  21. Dhaniya powder - 6 tsp
  22. Haldi- 1/2 tsp
  23. Lal mirch powder - 2 tsp
  24. Garam Masala - 1 tsp
  25. Salt to taste
  26. Roasted jeera powder - 1 tsp
  27. Coriander leaves to garnish
  28. Oil to saute the masala

Instructions

  1. Soak the pulse (slipt green gram, white chickpea, brown chickpea) in water overnight
  2. Cut all the vegetables (potatoes, yellow cucumber, pointed gourd, snake gourd, pumpkin, drum stick, raw banana, eggplant, colocasia).
  3. Add all the vegetables into a pressure cooker along with the soaked pulses, except elephant Apple and tomatoes. Pour water, salt and turmeric. Pressure cook these vegetables for 10-15 mins) around 6-8 whistles) till they are nicely boiled.
  4. Meanwhile grind green chilli and ginger to make a fine ginger chilli paste.
  5. Dice the tomatoes and keep aside
  6. In a pan heat a little oil about 8 tsp. Add jeera and ginger chilli paste to it and saute for 2 mins
  7. Add diced tomatoes, red chilli powder, dhaniya powder, and saute till oil start leaving the masala.
  8. Add garam Masala to it and saute for 2 more mins.
  9. Till this time the pressure cooker would open up u can mash the cooked vegetables using a pav bhaji masher.
  10. To the vegetables add the cooked masala. And boil it.
  11. Once the vegetables starts boiling add in the grated coconut.
  12. Add in water depending on the consistency you wish your Curry to be.
  13. Garnish with coriander leaves and roasted jeera powder. Pair it with hot rice or plain dosa.
