Delcious, creamy bottle gaurd mousse, prepared with ghiya kheer.

Ingredients Serving: 4

  1. Bottle gourd 1/2 kg or 1 small size
  2. Powdered sugar 1/2 tbsp
  3. 10 saffron threads soaked in 1 tbsp warm milk
  4. Sugar 2 tbsp
  5. Chilled whipped cream 1/2 cup
  6. Green cardamom powder 1 tsp
  7. Mava 1 tbsp grated
  8. Milk boiled 1 cup
  9. For garnishing pomegranate seeds and pistachio


  1. Peel and wash the ghiya then fine grated with grater, Heat ghee in a heavy bottom pan add grated ghiya and fry till the excess water evaporates.
  2. Add milk, cardamom powder and mava cook on slow heat for 10 to 12 minutes or till the mixture becomes dry. switch off the gas and transfer the mixture into a strainer. Now strain the mixture.
  3. Cool and blend into a fine paste. Now take a large mixing bowl add whipped cream, powdered sugar, soaked saffron and ghiya mixture. mix well.
  4. Pour the mixture into the serving bowl or glasses, Garnish with pomegranate seeds and pistachio, Refrigerate for 1 hour. Serve chilled
