ABOUT Otak Otak (Nyonya fish custard wrapped in banana leaf and pan seared) RECIPE

Otak Otak is a classic Malaccan prepration which is a medley of fresh aromatic herbs and exotic spices with fresh sea food and rich coconut milk.

Ingredients Serving: 3

  1. Banana leaves( cut into rectangle)
  2. Coconut oil to pan grill
  3. 1 cup fish fillets
  4. 2tbsp shrimp
  5. 1/2 cup coconut milk
  6. 2-3 kaafir lime leaves
  7. 2-3 basil leaves
  8. 2 beetle leaves
  9. 1 inch fresh turmeric root
  10. 2-3 tbsp fried sliced onion
  11. 2-3 eggs
  12. 1/4 cup rice flour
  13. 2tsp garlic powder
  14. 2tsp red chilli flakes
  15. Salt to taste
  16. 2tsp Sprig Malacca spice blend

Instructions

  1. Prepare all the ingredients at work station
  2. Including spices
  3. Soak the banana leaf rectangles in hot water.
  4. Blend the fish and turmeric together to form a paste. Finely chop shrimps. Finely chop all the leaves.
  5. Now in a mixing bowl put all the ingredients and give a good mix.
  6. Take a banana leaf rectangle on the work station and put some mixture on the centre of the leaf.
  7. Fold the leaf from sides and secure with bamboo sticks.
  8. Keep the prepared pocket aside.
  9. The bamboo sticks can be used vertically or horizontally as preferred
  10. Now repeat the process with the remaining mix.
  11. In a grill pan pour some coconut oil.
  12. Now put the prepared pockets and let them sear
  13. Cook both the sides on medium heat
  14. Serve hot
