Chop lauki into small pieces.
Add lauki and whole tomatoes in boiling water and boil for 8-10 minutes.
Allow them to cool down. Add green chilly to a grinder jar along with boiled tomatoes and bottle gourd.
Process for 2-3 minutes until the ingredients turn into paste.
Take oil in a sauce pan. Turn on the heat.
Add mustard seeds. Let them crackle.
Add hing. Mix.
Next, add the ground lauki-tomato paste. Mix well.
Add salt and jaggery powder.
Let the mixture boil for 2-3 minutes. Add roasted methi dana powder and turn off the flame.
Your lip-smacking chutney is ready.
