Ingredients Serving: 2

  1. 2 tomatoes
  2. 1/2 cup lauki/bottle gourd
  3. 1/2 tsp- roasted fenugreek powder
  4. 1/2 tsp- jaggery or sugar powder or even dates puree
  5. 1 tsp oil
  6. 1/2 tsp-black mustard seeds
  7. 1 green chilly or more as per your spice level preference
  8. salt to taste
  9. 2 pinches of hing (asafetida)

Instructions

  1. Chop lauki into small pieces.
  2. Add lauki and whole tomatoes in boiling water and boil for 8-10 minutes.
  3. Allow them to cool down. Add green chilly to a grinder jar along with boiled tomatoes and bottle gourd.
  4. Process for 2-3 minutes until the ingredients turn into paste.
  5. Take oil in a sauce pan. Turn on the heat.
  6. Add mustard seeds. Let them crackle.
  7. Add hing. Mix.
  8. Next, add the ground lauki-tomato paste. Mix well.
  9. Add salt and jaggery powder.
  10. Let the mixture boil for 2-3 minutes. Add roasted methi dana powder and turn off the flame.
  11. Your lip-smacking chutney is ready.
