Eetch is a traditional Armenian sidedish made principally from bulger

Ingredients Serving: 5

  1. 1 cup bulger wheat
  2. 1 tsp olive oil
  3. 4 tbsp chopped onion
  4. 2 tomatoes
  5. 1 tsp lemon juice
  6. ½ tsp Jalapeno chopped
  7. 2 tbsp chopped Bellpepper
  8. parsley chopped
  9. 1 – 2 cup hot water
  10. pepper to taste
  11. salt to taste


  1. Blanch the tomatoes , remove skin and grind into puree.
  2. Wash the bulger and add the hot water to it and close with the lid and let it stand for 30 minutes or till all the water absorbs.
  3. Sauté the chopped onion in the olive oil.
  4. Mix all other ingredients together and add this to the bulger and mix in the tomato puree.
  5. Add the pepper and salt , adjust the seasoning to taste.
  6. Let it stand for 30 minutes and serve.
  7. Serve this healthy salad or entrée at room temperature with grilled chicken or lamb.
