Ingredients Serving: 2

  1. Mushroom -15 sliced (Baby Portobello or button mushroom)
  2. Red onion-1 chopped
  3. Ginger-1
  4. Garlic-3 flakes crushed
  5. Green chilli - 1 crushed
  6. Tomato paste-1/2 can
  7. Chilli powder - 1/2 tsp
  8. Pepper powder - 1/2 tsp or more
  9. Italian seasoning mix - 1 tsp and ( add 1 tsp of garam masala or tawa masala )
  10. Parmesan cheese powder - 4 tsp + 1 tsp to sprinkle on top
  11. Whole milk - 1/2 to 3/4 cup
  12. Sugar a small pinch
  13. Salt to taste
  14. Olive oil
  15. Parsley / basil leaves chopped

Instructions

  1. Heat the olive oil and add the crushed ginger, garlic and green chili. When the raw smell goes add onion and saute till light golden brown now add the tomato paste. Saute until the paste is cooked.
  2. Now add the chilli powder,pepper powder,sugar,salt, Italian seasoning mix and masala powder. Saute for few minutes add mushroom pour little water.
  3. Cook it covered on low flame until mushroom is fully cooked and most of the water has dried up.
  4. Finally add Parmesan cheese saute for few minutes then add milk stir constantly (else the milk will curdle) and allow it to just warm and switch off flame immediately.
  5. Sprinkle more cheese on top and also chopped parsley leaves and serve.
  6. Mushroom pizza topping curry goes well with roti, naan or other flat breads.
