Ingredients Serving: 4

  1. For stuffing:
  2. Ground green peas 1 cup
  3. Besan 1tsp
  4. Ground cumin seeds 1/4 tsp
  5. Ground fennel seeds 1/4 tsp
  6. 1/4 tsp asaefotida 1/4 tsp
  7. Salt to taste
  8. Oil to cook
  9. Green chilli and ginger paste 1tsp
  10. For gatte (outer layer)
  11. Besan 1 cup
  12. oil 1tbsp
  13. Ajwain 1/4 tsp crushed
  14. Cooking soda a pinch
  15. Asaefotida 1/4 tsp
  16. Red chilli pwd 1/4 tsp
  17. Coriander pwd 1/4 tsp
  18. Salt to taste
  19. FOR GRAVY:
  20. Onions 2 crushed
  21. Ginger garlic paste 2 tsp
  22. Turmeric pwd 1/2 tsp
  23. Red chilli pwd 1 tsp
  24. Coriander pwd 1 tsp
  25. Asaefotida 1/4 tsp
  26. Tomato puree 1/2 cup
  27. Salt to taste
  28. Cloves 3-4 ground
  29. Bay leaf 1
  30. Oil to cook

Instructions

  1. Firstly for preparing the stuffing for gatte. Take a pan and pour 1 tbsp oil. Add a tsp besan and cook till it turn golden. Now add ginger and green chilli paste and asaefotida. Then add crushed green peas . And add ground cumin seeds, fennel seeds and other spices as well. Now add salt to taste. And keep stirring till the filling leave the pan itself. Keep it aside and let it cool.
  2. For the gatte . Take besan and add a tsp oil. Now add a pinch of cooking soda, asaefotida and the rest of the mentioned spices. Next add salt to taste. Knead a tight dough and keep it aside.
  3. Now make 3-4 round balls of the dough. And make thick puris of it. Take the 1tsp filling of green peas and place it in centre of the puri. Now make the puri cover the whole filling with the help of water. Pack the stuffing completely from all sides. Similarly make 4-5 rolls. (As we do in spring rolls.)
  4. Take a big vessel and fill 1/2 ltr water in it and boil it. Place the stuffed gutte rolls in the boiling water. When the gutte will cooked it will automatically come up. Take the stuffed gatte in a strainer and let it cool. Cut it into slices.
  5. For the gravy.. Cook oil in a pan. Add cumin seeds, asoefetida, crushed cloves and bay leaf. Now add onion and ginger garlic paste and cook till it turns golden. Now add the dry spices and tomato puree. Add salt to taste and cook till oil separates. Add water to make a semi thick gravy. When the gravy starts boiling add stuffed gatte in the gravy. Close the lid and let the gatte cooked on a low flame for further 5 mins. Enjoy with the paratha or roti or rice. :stuck_out_tongue:
