  • ghee 3 tablespoons
  • onion sliced 1 Cup
  • onion chopped 1 Cup
  • carrot 1/2 cup
  • ginger paste 1 tablespoon
  • bay leaves 2
  • cloves 4
  • cardamom 3
  • cinnamon 3 inch pieces
  • coriander leaves a bunch
  • cashews
  • raisins
  • salt

How to make Ghee Rice Kerala Style

  1. HEAT 3 TABLESPOON GHEE IN A PRESSURE COOKER
  2. ADD BAY LEAVES CINNAMON CARDAMOM AND CLOVES AND FRY FOR A MINUTE
  3. NOW ADD 1 TABLESPOON GINGER PASTE AND FRY UNTIL RAW SMELL GOES
  4. ADD 1 CUP CHOPPED ONION AND FRY UNTIL TRANSLUCENT
  5. NOW ADD 2 CUPS OF WASHED RICE
  6. FRY FOR A MINUTE OR TWO
  7. NOW ADD 3 CUPS OF BOILING WATER
  8. ADD THE CORIANDER LEAVES AND 1/2 CUP CARROTS AND MIX WELL
  9. ADD SALT AND MIX WELL
  10. PRESSURE COOK FOR 2 WHISTLES
  11. TAKE OIL/GHEE IN A FRYING PAN
  12. FRY CASHEWS AND RAISINS UNTIL GOLDEN BROWN
  13. REMOVE ONTO A PLATE
  14. TO THE SAME OIL/GHEE ADD 1 CUP SLICED ONION AND FRY UNTIL GOLDEN BROWN
  15. REMOVE ONTO A PLATE
  16. AFTEE THE PRESSURE RELEASES ADD THE CORIANDER LEAVES, FRIED CASHEWS RAISINS AND ONION AND GIVE IT A MIX
  17. GHEE RICE KERALA STYLE IS READY. CAN BE SERVED WITH ONION AND CUCUMBER RAITA AND BOILED EGG
