Ingredients Serving: 4

  1. 600 gms of shredded Cabbage
  2. 1 medium sized potato cubed to 1" pieces
  3. 1 medium sized carrot cubed similar to the potatoes
  4. A handful of green peas
  5. 1 medium sized onion sliced finely
  6. 1 tsp each of red chilli, coriander, cumin and turmeric powders
  7. 2 tsp sunflower oil
  8. 2 tsps clarified butter or ghee
  9. 1 tsp whole cumin seeds
  10. 1 bay leaf
  11. 1 whole red chili
  12. 2 tsp ginger paste
  13. Sugar and salt to taste
  14. 1 tsp Bengali garam masala

Instructions

  1. In a pressure cooker, heat the sunflower oil and 1 tsp of ghee. Add cumin seeds and let it splutter.
  2. Add the bay leaf and dry red chilli and fry for 10 seconds. Now add the onions and fry till golden brown
  3. Add the ginger paste and cumin, coriander, turmeric and red chili powders mixed in a little warm water. Fry this paste until the oil leaves the sides.
  4. Add the potatoes, carrots, green peas and stir well for 2 mins.
  5. Now add the shredded cabbage and mix until the masala coats the vegetable well. Add salt and pressure cook to 1 whistle. you may need to add 4-5 tbsps of warm water so the curry does not stick while pressure cooking.
  6. Once the pressure cooker cools, put the curry back on medium flame to cook off the excess water that the cabbage will leave.
  7. Add sugar and stir until it dissolves. Now add the bengali garam masala and the reserved 1 tsp of ghee before taking off the flame.
  8. Serve with roti or rice and lots of love.
