ABOUT Revani - Turkish Semolina Cake Soaked in Lemony Sugar Syrup RECIPE

A semolina cake that uses no butter and is drenched in a lemony sugar syrup!

Ingredients Serving: 8

  1. Rava or Semolina – 1 Cup
  2. Maida or Refined Flour – 3 tbsp
  3. Sugar – 2 Cups
  4. Eggs – 3 Dahi or Yoghurt – 1 Cup
  5. Vanilla extract – 2 tsp
  6. Baking Powder – 1 tsp
  7. Olive Oil – 4 tbsp + 2 tbsp
  8. Lemon zest – 1 tsp
  9. Lemon Juice – 2 tbsp
  10. Water - 1 cup

Instructions

  1. In a heavy bottomed vessel, heat 1 Cup sugar and water together till the sugar is melted and the syrup comes to a boil.
  2. Turn the heat down and let the syrup simmer for 10 minutes.
  3. Add the lemon juice and simmer for 5 minutes.Turn off the heat.Let the syrup cool completely.
  4. Oil the cake tin well with 2 tbsp Olive oil. Pre-heat the oven to 180°C.
  5. Whisk the eggs and 1 Cup sugar together till the sugar is melted. Add the olive oil and yoghurt. Mix well.
  6. Add the semolina and flour. Mix well. Add the baking powder. Mix well.
  7. Add the vanilla extract, lemon juice and lemon zest. Mix well. Pour the batter into the oiled cake tin.
  8. Bake for about 30-40 minutes till the crust just turns golden brown.
  9. Use the tooth-pick test to check if the cake is done. While the cake is still hot, pour the cooled syrup onto the cake.
  10. Let the cake absorb the syrup completely. Let the cake cool completely.
  11. Cut the Revani into squares or diamonds. Crush the pistachios into a coarse powder.
  12. Garnish with dessicated coconut and pistachio powder.

sounds easy and nice but u hv 2 cups sugar shd all of it made into syrup because yr next step is mix eggs and sugar?????
