Ingredients Serving: 4

  1. For grilled mushroom
  2. 10 button mushroom sliced
  3. 1 tbsp butter +1 tsp olive oil
  4. Salt and pepper to taste
  5. 1 tbsp balsamic vinegar
  6. 1 tsp honey
  7. 1 tsp dark soya sauce
  8. 1 tbsp red chilli sauce
  9. For polenta ring
  10. 1 cup polenta
  11. 3 cup vegetable stock
  12. Salt and pepper to taste
  13. 2 tbsp butter
  14. Some dried herbs
  15. chilli flakes as per taste
  16. For mushroom pond
  17. 1 onion
  18. 10 slices mushroom
  19. 1 tbsp chopped garlic
  20. 2 bay leaves
  21. 4 clove
  22. Salt and pepper
  23. 1 tbsp.butter + 1 tsp olive oil +1tbsp butter
  24. 2 cup vegetable stock
  25. 2 tbsp fresh cream
  26. 1 tsp white pepper powder
  27. 1 tsp chilli flakes


  1. For grilled mushroom Heat a pan.To this add butter and oil
  2. Then add mushroom slices to it and saute on high flame.
  3. MIX balsamic vinegar, Soya sauce ,chilli sauce and honey
  4. Add seasoning as required.. cook for few mins and keep it aside For polenta ring.
  5. Heat vegetable stock in a sauce pan .To this slowly add polenta and keep mixing till all the moisture is absorbed and polenta is cooked.
  6. Add dried herbs and chilli flakes. Check seasoning.
  7. Keep it aside to cool
  8. For mushroom pond
  9. Heat a sauce pan.To this add butter and oil
  10. Add onion garlic to pan and cook for few mins .
  11. Then add bay leaves.mushroom slices and cook for 2 mins.
  12. Add salt and pepper
  13. Then add vegetable stock and cook for 15 mins
  14. Heat a sauce pan .To this add strikes water.
  15. Blend the remaining of mushroom mixture
  16. Pass through a sieve.Add smooth puree to sauce pan where mushroom water mixture is already cooking.
  17. Cook for few minutes
  18. Then add cream and remaining buttet
  19. At last add white pepper powder and adjust salt
  20. For presentation Take two concentric round cookie cutter depending on the thickness of ring we want ..
  21. In a serving platter first place bigger ring.
  22. Fill this circle with polenta. Now place another cookie cutter, Smaller one in the centre of bigger ring and scoop out polenta.
  23. Fill this gap created by scooping out polenta from centre with grilled mushroom
  24. Now pour mushroom soup outside bigger ring to create like pond
  25. Sprinkle some chilli flakes if required
  26. Garnish with some green coriander sprigs and serve
