ABOUT CHICKEN ALA KIEV RECIPE

Chicken ala Kiev is a Russian dish.Actually Kiev is the capital of Ukraine.It is a dish of chicken fillet pounded and rolled around cold butter, then coated with eggs and bread crumbs, and either fried or baked.Chicken Kiev is made from a boned and skinned breast which is cut lengthwise, pounded and stuffed with butter. Western recipes usually call for garlic butter, while in Russian ones regular butter is used.Herbs can be added to the butter.In some American recipes butter is replaced by blue cheese.

Ingredients Serving: 1

  1. Boneless chicken breasts-2
  2. butter - 1 cup
  3. Oil for deep-frying
  4. SPRIG(Genoa) 7 in 1 multipurpose spice blend-2 table spoon
  5. White sauce - 3 tablespoons
  6. Mashed potato(mixed with 1tablespoon white sauce) - 1 medium size
  7. Ginger-garlic paste- 1/2 teaspoon
  8. 1 garlic clove (minced)
  9. Veggies-carrot & green bell pepper cut into 1" size ,onion(cubed)
  10. Refined flour (maida) - 1/2 cup
  11. Bread crumbs - 1/2 cup
  12. Eggs - 2
  13. 1 tablespoon lemon juice
  14. Crushed black peppercorns- 1 teaspoon
  15. Salt to taste

Instructions

  1. In a medium bowl, mash or cream together 2/3 of softened butter with 1 garlic clove minced, 1 Tbsp lemon juice,a pinch of peppercorn, 1 table spoon SPRIG 7 in 1 spice blend, 1/2 tsp salt and 1/2 tsp pepper.Cover with plastic wrap and place in freezer while working on everything else.
  2. Pat dry the chicken. Remove the tenderloins from the chicken breasts (if any) and carefully pound them with a mallet hammer to 1/8” thick and not thinner or it may tare easily. It should be thinner on the edges which will help to seal the chicken and prevent butter from oozing out when cooking.
  3. Sprinkle some salt and crushed peppercorns over the slit chicken breasts.
  4. Take rest of Sprig(Genoa) spice blend
  5. Sprinkle it on the chicken breasts.
  6. Remove prepared butter from the freezer and Pipe out the butter mixture in the center
  7. Put another chicken breast on it and seal the edges carefully with the help of thumbs so that the butter mixture must not ooze out.
  8. Spread refined flour and breadcrumbs on 2 different plates. Break eggs into a bowl and whisk well;Gently cover the finished chicken in flour, dusting off the excess flour
  9. Next, dip it in the whisked egg
  10. Finally cover chicken with bread crumbs (gently shake off excess)
  11. Gently place the chicken in the hot oil and fry until golden brown and crisp.(4-5 mins each side), then turn over. Drain on absorbent
  12. Heat rest of the butter in another frying pan.Add ginger-garlic paste.Fry a little.Add carrot,green bell pepper and onion;add a pinch of black pepper and salt to taste.Saute till they become soft
  13. Finally,Place the chicken kiev on the plate.Savour it with mashed potato,white sauce and veggies.
