ABOUT Gil E Firdaus RECIPE

Gil E Firdaus is an extremely delicious dessert from Hyderabad. Rich and amazingly delicious kheer made from Lauki/Bottle gourd rice milk and dry fruits.

Ingredients Serving: 4

  1. Milk 1 litre
  2. Bottle gourd/Lauki grated 1 cup
  3. Basmati rice 5 tablespoon
  4. Khoya/Mawa 100 gm /half tin evaporated milk
  5. Sugar 5 tablespoon
  6. Ghee 1 teaspoon
  7. green cardamom crushed 6 to 7
  8. Rose water 1 tablespoon
  9. Almonds chopped 15
  10. Pistachios chopped 10

Instructions

  1. Soak the basmati rice for 20 to 30 minutes ,drain and grind in a mixer to a coarse texture.
  2. Heat a pan add ghee then add grated bottle gourd/lauki and saute for 4 to 5 minutes over medium flame until moisture evaporates.
  3. Add evaporated milk and bring it to a nice boil
  4. In another pan heat milk to this add the crushed rice
  5. Let it cook over medium flame
  6. Add the bottle gourd mixture to this.
  7. Let it cook over medium flame till the rice is cooked.
  8. If adding mawa add now .
  9. Keep stirring constantly to avoid lumps.
  10. Add sugar ,cardamom powder and chopped nuts.
  11. Once kheer reaches medium thick consistency add rose water
  12. Switch the flame off
  13. Serve warm or chilled
  14. If serving in earthen pots ,pour the kheer when it reaches room temperature,chill the earthen pots and serve kheer garnished with rose petals and dry fruits.
