ABOUT Peas Pulao (no onion & no garlic) RECIPE

This peas pulao is made without adding onion or garlic, so this is essentially a healthy and sattvik version of food. Since there is no chopping of any veggies or no addition of any meat, hence this is made so quickly. Because of use of only peas, this pulao has some sweet taste as compared to other pulao. The spices like cinnamon, cardamom, cloves, star anise add the perfect flavor to the dish.

Ingredients Serving: 3

  1. Basmati rice (long grain) 1 and ½ cup
  2. Green pea 1 cup
  3. Ginger (grated) ½ teaspoon
  4. Green chili 2 number
  5. Cumin seed 1 teaspoon
  6. Clove 3 number
  7. Black peppercorn ½ teaspoon
  8. Green cardamom 2 number
  9. Black cardamom 1 number
  10. Cinnamon ¼ inch
  11. Bay leaf 2 number
  12. Cashew 5 to 6 number
  13. Star anise 1 number
  14. Red chili powder ½ teaspoon
  15. Water 3 cup
  16. Salt As needed

Instructions

  1. Rinse rice well in fresh water.
  2. Soak for at least 30 mins, then drain and keep aside.
  3. Soak frozen peas in water for 5 minutes.
  4. In a pressure cooker, heat oil.
  5. Saute cashews till light brown.
  6. Take out and keep aside.
  7. In the same oil add cinnamon stick, cloves, peppercorns, green cardamom, black cardamom, bay leaves, star anise and cumin seeds.
  8. Saute till a nice aroma of spices comes out and also cumin seeds starts to splutter.
  9. Next add grated ginger and green chilies and saute for 1 minute.
  10. Then add green peas, fried cashews, red chili powder and cook for for 1 to 2 mins in medium flame.
  11. Add drained rice, mix well gently and saute for 1 to 2 minutes in medium flame.
  12. Pour water, add salt and mix.
  13. Close cooker lid and cook for 2 whistles on high flame.
  14. Let the pressure settle down on its own and then open the lid of cooker.
  15. Gently fluff the pulao, serve hot with any raita or side dish of choice !
