TANDOORI CHICKEN MARINATED IN MAHARASHTRIAN THECHA CHUTNEY AND SERVED WITH GOZI BERRY

Ingredients Serving: 4

  1. Tandoori Chicken Leg Pieces
  2. 1 Lemon Juice
  3. 7 to 8 Green Chili depending upon the sharpness
  4. 2 tbsp garlic
  5. 3 tbsp Coriander Leaves
  6. 2 tsp Balsamic Vinegar
  7. 1 tsp White Pepper Powder
  8. 1 tsp Amchur Powder
  9. 1 cup hung curd
  10. 200 grams mushroom cut into half
  11. What You Need for the Quinoa :
  12. 1 cup Quinoa
  13. 250 grams of spinach chopped
  14. salt to taste
  15. 1 tsp lemon juice

Instructions

  1. Marinate chicken in the above ingredients for atleast 2 hours
  2. Grill them in oven till done
  3. Soak quinoa for 5 minutes in water and then cook in pressure with 2 cups of water.
  4. Once, pressure has dropped, open the lid and let quinoa cool down.
  5. Add lemon juice and mix well
  6. Heat 1 tsp butter in a pan.
  7. Add the spinach and cook till its done.
  8. Add cranberry and gozi to it and cook for another minute.
  9. Add this to the quinoa and mix well.
