ABOUT Zunka - Pitla RECIPE

Ingredients Serving: 4

  1. 2 cups chickpea flour
  2. 1 big onion chopped
  3. few green chili chopped
  4. few curry leaves
  5. turmeric powder
  6. red chili powder
  7. salt to taste
  8. couple of tea spoon of oil
  9. 1 tsp mutard seeds
  10. 1 tsp cumin seeds
  11. few coriander leaves chopped

Instructions

  1. Heat oil in a non stick wok on high.
  2. Once oil is hot, add mustard seeds. It will start crackling.
  3. Lower the gas flame and add cumin seeds, followed by chopped onions, curry leaves and green chilies.
  4. Cook till onion turns brown.
  5. At this point, add chickpea flour or besan.
  6. Roast till you get a nice aroma.Add turmeric powder and red chili powder
  7. Add water, whisk with an egg whisker, salt to taste
  8. Whisk briskly till there is a uniformity in the consistency.
  9. If you want to make Pitla, the water content will be more.
  10. Zunka is almost semi dry.
  11. Sprinkle coriander leaves before serving
