ABOUT Triple Cheese Foccacia with Onions and capsicum RECIPE

The triple cheese Italian Foccacia bread with onions and capsicum is soft, moist and yet slightly flaky in texture. This simple, basic foccacia is bursting with unique flavor obtained by using Sprig’s Genoa 7 in One Multi-Purpose Spice Blend. It can be served as an appetizer, as sandwich bread, as an accompaniment to the main meal or even as a pizza base.

Ingredients Serving: 8

  1. All purpose flour – 3 cups
  2. Warm water- ¾ cup + ½ cup
  3. Sugar – 1 tbsp
  4. Dry yeast – 2 ½ tsp
  5. Olive Oil – ¼ cup + 2 tbsp
  6. Salt – 2 ½ tsp
  7. Sprig Genoa spice blend – 2 tsp
  8. Mozzarella cheese – 1 tbsp, grated
  9. Parmesan cheese – 1 tbsp, grated
  10. Processed cheese – 1 tbsp, grated
  11. Onion – 1, medium sized, cut into thin roundels
  12. Capsicum – 1, medium sized, cut into thin roundels

Instructions

  1. Sieve flour and salt. Keep it aside. Grate mozzarella, Parmesan and processed cheese. Mix them and keep it aside.
  2. Add sugar in 1/2 cup of warm water and dissolve it. Add yeast. Mix well and keep it closed until it blooms.
  3. In a large mixing bowl, mix the flour mix with olive oil and Sprig Genoa spice blend.
  4. Add the frothing yeast to the flour mix. Knead it into sticky dough by adding warm water little by little at a time. You may require ¾ cup of lukewarm water for the given ingredients.
  5. Smear a tbsp of olive oil and give a nice knead to the dough till it is soft and little bit elastic.
  6. Transfer the dough to a large greased bowl. Cover it with a damp towel and keep it aside for 2 hrs in a warm place for it to prove or to double up in size.
  7. Grease a loaf pan or a deep oven proof dish. Once the dough gets proved, punch and knead it again for 5 minutes. Transfer the dough to the greased pan and stretch it out to fill the corners and edges.
  8. Create small dents or dimple over the surface of the dough and drizzle a tbsp of olive oil. Arrange thinly sliced onion and capsicum roundels over them.
  9. Sprinkle the grated triple cheese mix with a thin layer on top. Preheat the oven at 180 deg C for 10 minutes. Bake the bread for 15 to 20 minutes or until the top cheese layer turns golden brown.
  10. Remove it from oven and let it cool on a wire rack for 10 minutes. Serve it as an appetizer with dips or chutneys or use it for sandwich or as an accompaniment to the main meal.
