ABOUT Baked Enchilada RECIPE

Delicious chicken mixed with yummy enchilada sauce baked perfectly.

Ingredients Serving: 4

  1. 4 Tortillas
  2. 1 cup shredded chicken
  3. 1/2 cup Kidney Beans, boiled
  4. 1/2 cup Grated Cheese
  5. 1/2 cup Enchilada Sauce
  6. 1/2 tsp cumin
  7. 1/4 tsp Cayenne
  8. Salt and pepper to taste
  9. cilantro to garnish.


  1. Preheat oven to 160 degree C .
  2. Toss the chicken, kidney beans, cumin, cayenne, salt and pepper. Add the enchilada sauce and combine well.
  3. Lay out the tortilla and place spoonful of the chicken mixture in the centre. Sprinkle with cheese and roll it up.
  4. Place on the baking tray, top with cheese and bake for 20 mins.
  5. Garnish with cilantro and serve hot.
