Pumpkin Spice Cake with Cinnamon frosting

ABOUT Pumpkin Spice Cake with Cinnamon frosting RECIPE

A rich and silky cake with the crunch of walnuts offset with a delicious cinnamony cream cheese frosting.

Ingredients Serving: 10

  1. 3 cups Flour
  2. 3/4 cup Butter, softened
  3. 2 cups Brown Sugar
  4. 500 gms Pumpkin(sweet variety)
  5. 2 tsp vanilla extract
  6. 3 eggs
  7. 1 1/2 cups Buttermilk
  8. A pinch of salt
  9. 1/4 cup Walnuts
  10. 1 tbsp Allspice
  11. 2 tsp baking powder
  12. For frosting-
  13. 50gms Butter, unsalted and softened
  14. 200gms Cream cheese
  15. 2 cups Icing sugar
  16. 1 tsp Cinnamon powder
  17. 1/2tsp Vanilla extract

Instructions

  1. Heat oven at 200 deg. C, cover the pumpkin in foil and place in the oven. Bake for an hour till soft. Discard peel and puree. Measure out 400gms of puree and keep aside. Let cool.You can sieve the pumpkin also for smoother results.
  2. Preheat oven at 180 deg C. Grease and line a square cake pan.
  3. Cream the butter and sugar together till light and fluffy.
  4. Sieve the flour, baking powder, salt, spices and baking powder.
  5. Add eggs to the butter-sugar mixture, beating well after each addition. Add in the buttermilk and pumpkin puree and beat again.
  6. Now fold in the flour mixture into the pumpkin mixture, add walnuts and mix in with a light hand.
  7. Pour batter into prepared pan and bake for 30-40 minutes or till done.
  8. Transfer to a rack, invert after 15 minutes and let cool completely.
  9. For the frosting-
  10. Take a clean bowl and add in the butter and cream cheese, start beating, add in the sugar slowly along with the cinnamon and vanilla. Whip till silky smooth.
  11. Frost cake with the icing. Let set and serve.

Hello Bindiya, I can smell the delicious aroma of the cake right here. In hills we get red pumpkin ( called lal kaddu). I too baked a pumpkin spice cake using ripe red kaddu and poured ganache on top. Your frosting is really flavourful and aromatic. Bookmarked! Thanks for sharing.
