Ingredients Serving: 2

  1. 1 cup fresh/frozen paneer cut grated
  2. 1 cup tomatoes and onions chopped
  3. 2 Tablespoons Oil
  4. 1/2 tsp Cumin seeds (Jeera)
  5. 1 bay leaf
  6. 1 tablespoon finely chopped green chilies
  7. 1/2 tbspn of powdered spices like: turmeric, red chilly, coriander, garam masala
  8. Salt to taste
  9. 1 tbspn finely chopped coriander

Instructions

  1. Heat the oil in sauce pan over medium heat; after oil is moderately hot add cumin seeds.
  2. After the seeds crack add the green chillies pieces and onions and stir for about one minute. Add tomatoes, coriander, salt, sugar and red chili powder, stir and mix well. Cover the pan and cook for 3-4 minutes till the tomatoes becomes soft.
  3. Add paneer, stir and cook for 1-2 minutes. Don’t cook the paneer for a long time as paneer will lose the softness. If it is too dry add few spoons of water. Lastly add chopped coriander leaves to paneer bhurji and mix.
  4. Serve paneer bhurji with rotis, plain parathas, rice or add it with your toast to enjoy a paneer bhurji sandwich. This also makes a good stuffing for dosas or vegetable Frankie rolls.
