ABOUT Vegetable Poha RECIPE

This vegetable poha recipe has loads of veggies, its very filling and foremost its vegan Recipe. Its very apt for Breakfast, if you have not time, and not well or else wanted to start your day with healthy breakfast, I am sure this comes first.

Ingredients Serving: 2

  1. Flattened Rice – 1 1/2 cup (poha semi thick variety)
  2. Mixed vegetables – 3/4 cup (can use carrot ,beans, potato, green peas,cabbage,peppers, capsicum)
  3. Oil – 1 tbsp
  4. Green chilly – 3 nos
  5. Ginger – 1 tbsp chopped
  6. Curry leaves – few
  7. Salt – as required
  8. Mustard seeds – 2 tsp
  9. Chana dal – 1 tbsp

Instructions

  1. Take the flattened rice and sprinkle some water over it, keep aside, after 5 minutes, when you look you can see the absorbed poha, and it will look dry, Again sprinkle some water over the poha and keep aside.
  2. Heat the kadai and pour the oil , once its ready add the mustards seeds once its cracked, add the channa dal saute till the color changes.
  3. Then add the curry leaves, green chilly and ginger, saute till aroma gets, then add the chopped onion saute till its gets half cooked.
  4. Then add the chopped vegetables, saute well, adjust salt, you can cover the kadai and cook the vegetables too, else sprinkle little water to get the vegetables cooked.
  5. Now add the Poha, mix well, adjust salt, if needed sprinkle little more water. and cover the kadai for 5 minutes. open after 5 minutes, you can see the cooked vegetable poha.
  6. if needed it can be tempered with coriander leaves, too, serve hot, can be served with tiffin sambhar and coconut chutney.
