ABOUT Little Millet Payasam or Kutki/Saamai Payasam RECIPE

A healthy payasam to satisfy your sweet cravings. It is easy to prepare and delicious too. Made of little millet (Kutki or Saamai) and jaggery, it is nutritious too.

Ingredients Serving: 6

  1. Little millet or Kutki or Saamai 1 cup
  2. Grated jaggery 3/4 cup
  3. Ghee 3 tbsp
  4. Cardamom powder a pinch
  5. Milk 1 cup
  6. Water 2 and 1/2 cups
  7. Salt a pinch
  8. Roasted Cashewnuts and Pistachios 2 tbsp

Instructions

  1. Dry roast the little millet for about 5 minutes, and allow it to cool.
  2. Boil 2 and 1/2 cups of water in a pressure cooker.
  3. When it boils, add the roasted millets.
  4. Pressure cook for 5 whistles.
  5. Allow the pressure to release by itself.
  6. Next take grated jaggery and 1/4 cup water in another pan.
  7. Heat it and melt the jaggery until fully dissolved.
  8. Add cardamom powder to the melted jaggery.
  9. Then add the cooked little millet and mix.
  10. Add the milk and allow to boil for 2 minutes.
  11. Add a pinch of salt and mix.
  12. Now fry the nuts in ghee and add to the payasam. Mix well.
  13. Serve hot or cold.
