ABOUT Amaranth Cremes RECIPE

A twist to classic creme brulee.Break open the sugar crust on top of this healthy crème brûlée to reveal the blissful creamy Rajgira custard beneath.

Ingredients Serving: 4

  1. Popped rajgira seeds 1 cup
  2. Milk 1/2 liter + 4 tsp cold milk
  3. Amul Cream 1/2 cup
  4. Sugar 2-3 tbsp
  5. Vanilla Cuatard powder 2 tsp
  6. Few strands of saffron soaked in warm milk
  7. Grated fresh coconut 1 cup
  8. Brown sugar 4 tsp

Instructions

  1. Heat 1/2 liter milk in a non-stick pan, add half cup cream, mix well and heat for 2 minutes.
  2. Add this custard mix to the milk-cream mixture, mix and cook till the mixture thickens.
  3. Strain the mixture so that there are no lumps
  4. Now to pop rajgira, heat a thick bottom kadai
  5. To check the heat just sprinkle some drops of water on it and see if sizzling sound comes
  6. That sizzling sound indicates that kadai is hot enough to pop rajgira
  7. Toss it on high flame
  8. Cover the kadai with a lid and quickly shimmy/slide the pot back and forth just above the burner.
  9. As soon as rajgira starts to pop switch off the flame and let it sit for few seconds.
  10. Take out in a bowl
  11. Now repeat the process to get more popped rajgira this way in small batches.
  12. Switch off the flame after it reaches to desired consistency
  13. Pour the mixture into 4 individual ramekin moulds and refrigerate till set.
  14. Caramelize the sugar with a brulee torch OR
  15. And press it on the sugar till brown. Works like a charm!’
  16. Your creme brulee is ready to serve
