Thattai is a south indian version of Mattri made using Rice flour and udad dhall flour generally . This is a slightly different and a healthier version using Millet flour. Try this different and crispy Thattai using Jowar Flour / Cholam Maav and surprise your family

Ingredients Serving: 3

  1. 8 tablespoons jowar flour / sorghum flour
  2. 2 tablespoons rice flour
  3. 1 tablespoon udad Dhall flour
  4. 1 tsp Redchilli powder
  5. 1/2 tsp haldi/turmeric powder
  6. pinch of asafoetida/ hing
  7. 2 - 3 tablespoon unsalted butter
  8. oil for deep frying
  9. salt to taste
  10. handful curry leaves

Instructions

  1. take all the dry ingredients except butter and mix it well with ur fingers/ spoon.
  2. add butter and form a nice crumbly mixture
  3. add water little by little and form a nice smooth dough
  4. spread a nice plastic sheet and grease it lightly
  5. make small even sized balls from the dough and place it on the sheet
  6. using a small bottle cap , press the small balls to form even sized discs
  7. prick small holes using a fork or tooth pick to prevent puffing up while frying
  8. make small discs using the entire dough and keep ready.
  9. slip into hot oil and fry on medium flame until crisp and golden brown
  10. store in an airtight container
