Ingredients Serving: 6

  1. 4-5 Peaches
  2. 1/2 cup Sugar
  3. 1 tbsp Butter
  4. 1 tbsp Plain Flour
  5. 1/2 tsp Cinnamon powder
  6. 1/2 tsp Vanilla extract
  7. For the Crust-
  8. 100gms Unsalted Butter, chilled
  9. 1 cup plain flour
  10. 1 Egg/ Milk(for brushing on top)
  11. 2 tsp Powdered Sugar
  12. 1/2 tsp Salt
  13. 5 tbsp Ice Cold water
  14. Extra Sugar and Cinnamon for sprinkling on top

Instructions

  1. To assemble the galette-
  2. Cut up the chilled butter into small cubes. Add the flour, sugar and salt to a food processor and pulse to mix. Now add in the butter and pulse again till mixture resembles crumbs.
  3. Add in the chilled water and pulse briefly till dough starts to come together.
  4. Take out dough and pat together, wrap in cling film and chill for an hour.
  5. Preheat oven to 220 deg C. Slice the peaches(you can use canned peaches also, just drain them really well).
  6. Transfer peaches to a large bowl, add flour, sugar, cinnamon and vanilla to it and mix well.
  7. Roll out dough into a large circle and place on baking tray/parchment. Drain the peaches and arrange on top of the dough decoratively.
  8. Dice the butter and dot the peaches with it.
  9. Fold the edges over as shown in the picture till it encases the filling completely, brush with the egg/Milk and sprinkle with the cinnamon and sugar.
  10. Bake for 20 minutes till crust is golden.

Delicious, juicy and flavourful Galette. I would love to try out one before stone fruits are out from the market. Apricot Galette or mixed summer fruit Galette would also be great. Thank you Bindiya for Galette ideas!
