Ingredients Serving: 6

  1. 1 cup quinoa
  2. 2-2½ cups water
  3. ¼ cup grated jaggery or jaggery powder
  4. 2 tbsp finely chopped dried apricot or raisins
  5. 1 - 2 tsp ghee (optional)
  6. ¼ cup chopped almonds and pistachios
  7. 1 tsp cardamom powder

Instructions

  1. Wash the quinoa in a sieve under running water 3-4 times.
  2. Add the quinoa into a saucepan.
  3. Add water and bring the mixture to a boil over medium heat.
  4. Lower the heat, cover the pan and let the quinoa cook till its done.
  5. When little water is left in the mixture add the jaggery powder.
  6. Stir till the jaggery dissolves.
  7. Add the chopped dried apricots.
  8. Cook the quinoa till all the water evaporates.
  9. Add cardamom powder and chopped nuts.
  10. Add ghee on top and mix and serve hot quinoa lapsi with roti and curry or as a dessert.
